Ingredients:

1/2 cup Butter

1 cup Fine

sugar 2 large Eggs 2 cups Cake flour 1/2 teaspoon baking powder 3/4 teaspoon Bicarbonate of Soda 2 Bananas - mashed 4 tablespoons
sour cream 1 teaspoon vanila essence 1/2 teaspoon salt Preheat the oven to 170'c, 325'F, Gas mark 3

1. Into a large bowl sift together the flour, sugar, baking powder, baking soda and salt.

2. In the bowl of a stand mixer, or in a medium bowl with a hand mixer. Beat the sugars and butter together until smooth, mix in the eggs and vanilla essence.

3. Add the flour, mashed bananas. Mix thoroughly in a figure of eight. Pour the mixture into the tin, smooth it level and place in the oven cook until the center is firm to the touch.

4. When you take the cake out of the oven, take it out of the tin and place it on a wire rack or something similar. This will stop the cake sweating and getting damp - it really does make a difference. Allow the cake an hour or so to cool down.
