250 gm granulated sugar

2 tsp baking powder

1 large egg

2 tsp vanilla extract

250 gm butter

200 gm all-purpose flour

300 gm. Cornflakes

Method:

1. Preheat the oven to 350'F 2. Beat the sugars and butter together until smooth. Mix in the egg and vanilla.

3. Stir together the flour, and baking powder, then mix them into the batter. Mix in the Cornflakes.

4. Line a large baking sheet with parchment paper. Scoop the cookie dough into 2-tablespoon balls
and place balls 4 inches apart on the baking sheet.

Flatten each ball very slightly with the palm of your hand. Bake until pale golden brown.

Do not overbake if you want a good texture. Remove from the oven and cool on a wire rack.
